A diet that works for you
Diet and nutrition play an important role in managing Carcinoid Syndrome. Understanding which foods cause symptoms and which ones don’t can help you stay in control. Since everyone’s Carcinoid Syndrome is different, it’s important to find a diet that works for you.
Consider the tips below for better symptom control:
- Foods with amines like aged cheeses, alcoholic beverages, smoked or salted foods, soy products, chocolate, and coffee
- Hot spices like pepper, cayenne pepper, and mustard
- Foods high in fat
- Foods high in serotonin like butternuts, black walnuts, pecans, pineapples, and bananas can affect 5-HIAA levels and should be avoided 24 hours before testing
- Fruits, vegetables, and whole grains
- Protein rich foods like fish, beef, chicken, and eggs
Meals that serve you better
Grocery shopping and meal planning can be challenging with Carcinoid Syndrome, especially when feeding an entire family. You may feel overwhelmed by dietary restrictions and that you’ve run out of options. Fortunately, with a little research and experimentation, you may find new ways to get creative in the kitchen.
Italian Chicken Pasta
PREP TIME: 10 minutes
COOK TIME: 30 minutes
FEEDS: 4 people
- 1 tablespoon of olive oil
- 2 skinless, boneless chicken breasts, cubed
- 2 cloves of garlic chopped
- 2 diced red bell peppers
- 1 cup of thinly sliced scallions (green onion)
- 2 cups of water
- 2 cups of small uncooked pasta – rigatoni, spiral, shell, etc
- ½ cup of low-fat shredded mozzarella cheese
- ¼ teaspoon of salt, ¼ teaspoon pepper & 2 teaspoons total of basil, oregano, or thyme (mixed)
Note: Recommend white flour pasta vs whole wheat. Keep serving portion small to ensure digestibility.
- Heat the olive oil in a large non-stick skillet over medium heat, sautée garlic in the oil, and then add chicken, cooking until chicken is no longer pink in the center, 5-8 minutes.
- Add the diced red bell peppers into the skillet, and cook while scraping any browned bits of food off of the bottom of the pan. Add seasoning-salt, pepper, basil, oregano, thyme.
- Add 2 cups of water and bring to a boil.
- Stir in the pasta, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but are still firm to the bite, about 8-10 minutes.
- Turn off heat and sprinkle the mozzarella cheese evenly over the skillet, and let sit until the cheese has melted.
Pork, Apple and Potato Bake
PREP TIME: 10 minutes
COOK TIME: 50 minutes
FEEDS: 2-3 people
- ½ teaspoon of salt
- ¼ teaspoon of ground cinnamon
- ¼ teaspoon of nutmeg or ground cardamom (optional, if well tolerated)
- ¼ teaspoon pepper (optional)
- ¼ teaspoon onion power (optional)
- 2 potatoes, peeled and sliced
- 2 teaspoons of olive oil
- 1½ lb of pork tenderloin
- 2 large tart apples, peeled
- Set oven to 425°F and coat the inside of a 9x9 inches pan with non-stick cooking spray.
- In a small bowl, combine salt, cinnamon, and cardamom.
- In a large bowl, place the potato slices and sprinkle them with 1/2 teaspoon of the spices and 1/2 teaspoon of olive oil, then toss the contents.
- Arrange the potato slices at the bottom of the pan, then bake uncovered for 10 minutes.
- Cut the pork tenderloin in half, then rub the remaining olive oil over the pork, before coating it with the remainder of the spice mixture. Place the coated pork halves over the potato slices and bake for 15 minutes.
- Meanwhile, cut each apple into 8 wedges.
- After 15 minutes, remove the pan. Flip the pork to the opposite side and add the apple wedges.
- Continue baking for another 15 minutes.
- Remove pan from oven and let cool. Slice pork and serve with potato and apples.
